This winter soup recipe is very easy to make. It costs little and it’s healthy! You can freeze it into portions as well.
You will need:-
2 large carrots or 3 or 4 small (chopped)
1 chopped spanish onion
4 broccoli florets
1 red pepper (chopped)
3 sticks of celery (chopped)
2 vegetable stock cubes.
Basil to garnish.
2 tablespoons of rapeseed or flax seed oil (or whatever your preference).
Heat oil in a large (ideally non-stick pan) add onions celery and pepper. Fry until soft. Add broccoli and carrots. Place lid on saucepan and steam through for around 5 minutes. Don’t let the ingredients burn, keep stirring.
Add stock cubes to about a litre of boiling water and stir until dissolved. Pour into ingredients and cook together for 10 minutes. Then blend until smooth. Garnish with basil.
Serve with pitta or soda bread. Whatever you fancy! To make it extra sexy add a dollop of fresh yoghurt.
