Tomato and Pepper Soup #Vegetarian #Recipe #Vegan

This is very easy to make and takes around 25 minutes from start to finish. I found a great greengrocers today that sell really cheap fruit and veg. It’s well worth stepping away from big supermarket chains and finding local grocers. They’re usually much cheaper which means you get more for your money whilst getting healthy too!

You will need:-

8 large tomatoes (chopped)

I large spanish onion (peeled and chopped)

I large red pepper (chopped and de-seeded)

3 vegetable stock cubes

2 heaped tablespoons of tomato puree

I heaped teaspoon of honey

Salt and pepper to taste

Basil to garnish (optional)

2 tablespoons of oil for frying

Fry onion and pepper until soft. Add tomatoes, puree and honey. Fry until all ingredients are heated through and tomatoes start to separate. Add 2 pints of boiling water and stock cubes. Cook for around 5 to 10 minutes. Blend until smooth. Serve! You can freeze this too. It makes around 10 portions. Enjoy!
